Jimmy Madla is now known as the chef and owner of Coobah, but back in the day he was the drummer of Veruca Salt. This week, he's returning to the music stage-sort of. The chef is the force behind Act One Café, the restaurant in the former Century Public House spot. Like Century, Act One is part of a music venue (now called Mayne Stage), and the food focuses on regional Midwestern cooking-local ingredients will show up in dishes such as chicken liver mousse, Berkshire pork French dip and malted chocolate pot au crème.
